Dopo il flop del rilascio di Cold Spring Harbor, Billy Joel aveva bisogno di evitare il suo contratto problematico con Produzioni Familiari. Con ciò, partì da Los Angeles e iniziò un lavoro di basso profilo come pianista in un bar sotto il nome di Bill Martin, poiché il suo nome completo era William Martin Joel.

Ha basato il piano Man canzone sulla sua esperienza di lavoro al bar Executive Room nell'area di Wilshire. Il piano Man è dal punto di vista di un cantante di piano bar che si concentra sulle persone del bar che arrivano di notte il sabato. Le persone in piano Man sono il barista John, lo scrittore immobiliare Paul, il marinaio americano Davy, gli uomini d'affari, la cameriera e un uomo anziano. Sono persone reali che Billy Joel ha incontrato mentre lavorava.  

Il barista John lavorava al bar durante i turni di Billy e la cameriera faceva riferimento a Elizabeth Weber, la prima moglie di Billy che lavorava nello stesso bar in cui si esibiva. Il romanziere immobiliare Paul è un agente immobiliare che aspirava a scrivere un romanzo americano di successo. Davy ha poi rappresentato David Heintz, incontrando Billy mentre era in marina e morendo di SLA nel 2003.
